Recipe - Kinda Sorta

Categories: Beef, Cajun, Casseroles, Cooper, Rice, Kinda Sorta
Ingredients:

1 pound Smoked sausage; cut in 1
1/2" pieces
2 cup Rice; uncooked
One half cup Onions; minced
15 ounce Tomato sauce
Water
Salt; pepper, garlic powder,
to taste

In a heavy Dutch oven, brown sausage on mediumlow fire until very
wellbrowned and pieces stick to bottom of pot. Bottom of pot should be
"gunky and sticky". Add tomato sauce, rice, 4 cups water, onions, salt,
pepper and garlic powder. Bring to a good boil. Reduce heat to low and
cover. Cook on low for 30 minutes or until rice is done. Do not let rice
stick to bottom of pot; you will need to add water once or twice to
completely cook rice.

NOTES : This recipe is called "Kinda Sorta" because it's kinda, sorta like
Cajun jambalaya. My mom was missing a couple of ingredients for jambalaya
one day and came up with this dish. It's very easy and very good.
