Recipe - Key Lime Pie Filling

Three fourths cup Fresh key lime juice
2 One half cup Soymilk
1 cup Sweetener of choice
5 tablespoon Cornstarch
2 teaspoon Lime zest
or use as pudding or in making parfaits.
Whip all ingredients together until smooth. Pour into saucepan and heat
over moderate heat, stirring constantly until thick and creamy. Pour into a
baked 9"pie crust or serving dishes, and chill until firm. Top as desired
(nonfat cool whip; yogurt with vanilla and sweetener to taste; etc.)
