Recipe - Kathys Sweet Potatoes

3 cup Mashed sweet potatoes; fresh
or canned
One half cup Sugar
2 tablespoon Melted margarine
1/3 cup Skim milk
One fourth cup Plus 2 T buttermilk
1 Egg + 2 egg whites; well
beaten
1 teaspoon Vanilla
One fourth teaspoon Salt
TOPPING
1/3 cup Firmly packed brown sugar
One fourth cup Flour
1 One half tablespoon Buttermilk
1 tablespoon Melted margarine
1/3 cup Chopped pecans
Combine sweet potatoes, sugar, 2 T melted margarine, skim milk, One fourth cup + 2 T
buttermilk, egg, egg whites, vanilla and salt. Mix well and pour into an
8inch square baking dish that has been sprayed with Pam. In a small bowl,
combine topping ingredients; sprinkle evenly over potato mixture. Bake at
350F for 2545 minutes or until set and top is browned.
