Recipe - Kartoffelpuffer (Potato Pancakes)

6 Raw medium potatoes grated
1 Raw medium onion grated
2 Eggs
One half teaspoon Salt
Pepper
4 tablespoon Flour
1 teaspoon Parsley
2 tablespoon Oil
Peel and grate the potatoes. Drain the liquid. Mix the potatoes with eggs,
grated onion, salt, parsley, and pepper.
Heat the oil in a skillet and then put the dough in, 3 tablespoons at a
time. Spread the dough out evenly. Bake on both sides until golden brown.
Potato pancakes can be served with any meat. A different way to serve them
is with applesauce (the most common way they are eaten in Germany).
