Recipe - Judys Banana Rum Coconut Tart

4 One half ounce Granulated Sugar
4 One half ounce Butter
3 Eggs
One fourth cup Pastry cream
1 Ripe
1 Capful
1 Pate Sablee or Pate Brisee
Tart shell
Powdered Sugar for
Garnish
Grated coconut (or fresh
Mashed banana
Dark rum
Method: Cream butter in mixing bowl. Add sugar & coconut. Mix in eggs
one at a time. Add pastry cream, bananas & mix. Add rum & mix. Pour into
Pate Sablee or Pate Brisee tart shell and bake at 350 for 3035 min, or
until done. Let cool & dust with powdered sugar.
