Recipe - Jo Beers Apricot Nut Bread

1 cup Dried, chopped apricots
1 cup Sugar
2 tablespoon Shortening or oil
1 Egg, well beaten
One fourth cup Sugar
One half cup Orange juice
2 cup Sifted flour
2 teaspoon Baking powder
One half teaspoon Soda
1 teaspoon Salt
1 cup Chopped nuts
Soak dried apricots 20 min. Cream 1 cup sugar, shortening, and egg. Combine
One fourth cup sugar and orange juice and stir into above mixture. Add dry
ingredients; blend well. Drain apricots, then stir with nuts into batter.
Bake in greased and floured loaf pan (8'x 4"x 3") at 350 degrees for 65
minutes or until done. Can be frozen after baking.
