Recipe - Javanese Sambal

1 One half pound Pork loin; boneless
One half cup Onion; minced
2 tablespoon Peanut butter
2 tablespoon Lemon juice
2 tablespoon Soy sauce
1 tablespoon Brown sugar
1 tablespoon Vegetable oil
1 Garlic clove; minced
ds Hot pepper sauce
Rice; cooked, hot
RAITA
3 md Cucumbers; peel, seed, thin
cut or sliced up
1 tablespoon Onion; minced
2 cup Plain yogurt
One half teaspoon Black pepper
One fourth teaspoon Cumin
2 tablespoon Cilantro; chopped
Make raita by combining ingredients. Cover and chill for 224 hours to
combine flavors.
Cut pork into 1/2" cubes; place in shallow dish. In blender or food
processor combine remaining ingredients except rice and raita. Blend until
smooth. Pour over pork. Cover and marinate in refrigerator 10 minutes.
Thread pork on skewers (if using bamboo skewers, soak in water 1 hour to
prevent burning). Grill or broil 1012 minutes, turning occasionally, until
done. Serve with hot cooked rice and raita, if desired.
