Recipe - Japanese Pickles

4 Japanese cucumbers
thinly cut or sliced up , OR...
3 standard cucumbers,
peeled and cut or sliced up
1 Red onion; thinly cut or sliced up
One half cup Rice vinegar
2 teaspoon Rice syrup
One fourth teaspoon Salt
3 Fresh red chili peppers
seeded
2 tablespoon Fresh cilantro
Combine all ingredients and refrigerate. Serve as a compliment to grilled
or spicy foods, or with chicken or fish.
