2 One half cup Flour
3 teaspoon Baking powder
One half cup Caster sugar
1 Egg
1 One fourth cup Coconut
1 teaspoon Vanilla essence
1 One fourth cup Milk
3 tablespoon Jam
6 tablespoon Vegetable oil
Little extra coconut for
garnish
Preheat oven to 400øF, prepare pans. Sift flour & baking powder, stir in
sugar & coconut. Beat egg, vanilla, milk & oil together. Add dry mix to wet
mix until just combined. Place a large tablespoon of batter into each pan,
add a teaspoon of jam to each and the rest of the batter. Sprinkle tops
with a little coconut. Bake for 2530 mins or until well risen & firm to
the touch. Makes 910 muffins.
