Recipe - Jacks Mud Crab Omelette

4 Baking Potatoes; peeled and
cut into 1/2inch thick
slices
1 lg Onion; skinned and cut or sliced up
Lemon & Pepper Seasoning
4 Pork Chops; up to 6
2 tablespoon Butter
Preheat oven to 375F degrees.
Place potato and onion slices in the bottom of a 10inch by 16inch pan
that is at least 3 inches deep. Season with Lemon Pepper and place pork
chops on top of the seasoned potatoes and onions. Season again.
Fill the pan with about 1/2inch of water and place 1 tablespoon of butter
at opposite ends of the pan. Cover the pan with foil and bake for 2 hours.
Remove from the oven, let cool for a few minutes, and serve.
