Recipe - Italian Vegetable Toss

2 md Zucchini, cut or sliced up
2 md Yellow Squash, cut or sliced up
10 md Mushrooms, quartered
1 tablespoon Margarine, melted
1 tablespoon Fresh Basil Leaves, snipped
One fourth teaspoon Cracked Black Pepper
Cutrite Wax Paper
2 md Tomatoes, cut in 8 wedges
One fourth cup Parmesan Cheese, shredded
In a shallow 2quart microwavesafe casserole, place zucchini, yellow
squash, mushrooms, margarine, basil and pepper. Cover with a sheet of wax
paper. Microwave on HIGH until squash is crisptender, 8 to 10 minutes,
rotating halfway through cooking time. Add tomato wedges and sprinkle with
cheese. Microwave on HIGH 2 to 3 minutes.
Makes 4 servings.
