Recipe - Italian Style Fish And Vegetables

2 tablespoon Olive oil
1 md Sliced onion
2 One half ounce Jar cut or sliced up drained mushrooms
One half teaspoon Basil
One half teaspoon Fennel
2 cup Frozen mixed vegetables
1 One half pound Fresh or frozen sole, thawed
One fourth teaspoon Salt
One fourth teaspoon Pepper
2 md Tomatoes, cut or sliced up
1/3 cup Grated parmesan cheese
1. In a large skillet over medium heat, heat the oil. Add the onion,
mushrooms, basil and fennel. Saute 4 minutes or until onion is tender.
2. Stir in frozen vegetables. Place fish over vegetables, sprinkle with
salt and pepper. Arrange tomato slices over fish. Reduce heat to low,cover
and cook for 1216 minutes or until fish flakes with a fork. Remove from
heat, sprinkle with parmesan cheese, cover and let stand about 3 minutes
or until cheese is melted.
