Recipe - Italian Rice Casserole

1 cup Chopped onion
One half cup Chopped green pepper
One half cup Chopped celery
1 tablespoon Oil
1 pound Ground beef
1 cn (15oz) tomatoes
1 cn (6oz) tomato paste
1 cn (2oz) mushroom pieces
2 tablespoon Chopped parsley
1 teaspoon Salt
One half teaspoon Thyme
One half teaspoon Black pepper
One fourth teaspoon Marjoram
1 cup Uncooked rice
1 cup Shredded cheddar cheese
Saute onion, pepper and celery in oil until almost transparent. Add ground
beef and cook until brown. Add tomatoes, tomato paste, mushrooms, parsley
and seasonings. Simmer 1 hour. Cook rice according to directions. Mix rice
with sauce and place in shallow baking dish. Top with cheese. Bake at 350
for 1520 minutes.
