Recipe - Italian Pepper Sausage

4 One half pound Course ground pork
1 One half pound Salt pork
1 Clove garlic
1 Onion, quartered
1 One half tablespoon Freshly ground black pepper
2 tablespoon Salt
4 tablespoon Paprika
4 teaspoon Fennel
2 tablespoon Crushed red pepper, dried
One fourth teaspoon Thyme
One half teaspoon Bay leaf, crushed
One half teaspoon Coriander
1 cup Red wine
Combine all ingredients, mix well and stuff into hog casing. You may split
lengthwise and broil under medium heat, or pan fry until brown on all sides
and well done.
