Ingredients:
Italian Country Bread With Biga recipe makes 1 Loaf
2 cup Chopped tomatoes
2 tablespoon Minced garlic
One fourth cup Olive oil
1 tablespoon Thyme or oregano
1 pound Haddock, sole or cod
Grated Parmesan cheese
One half cup Yellow cornmeal mixed with
Salt & pepper (One half tsp. ea)
Mix tomatoes, garlic, oil & thyme in bottom of baking dish. Dip fish
in cornmeal & place in dish. Bake at 450 for 2026 minutes. Top with
cheese.
