Recipe - Italian Breakfast Casseroles

4 md Red potatoes, cut or sliced up
2 tablespoon Cooking oil
8 Eggs, lightly beaten
1 tablespoon Butter or margarine
One half pound Thinly cut or sliced up fully cooked
ham, minced
2 cup Prepared spaghetti sauce
One half cup Shredded mozzarella cheese
One half cup Shredded cheddar cheese
In a skillet, fry potatoes in oil until tender, about 1015 minutes. Place
in the bottom of four individual 16oz. baking dishes. In the same skillet,
scramble eggs in butter until set; spoon over potatoes. Top with ham. Pour
One half cup spaghetti sauce into each casserole; sprinkle with cheese. Bake at
350 for 20 minutes or until hot and bubbly.
