Recipe - Italian Bread Filled With Mushrooms

One half pound Italian bread 3 days old;
1" slices
One half cup Cold water
One fourth cup Red wine vinegar
2 Cloves garlic minced
One half cup Olive oil
Salt and pepper
1 Cucumber peeled; seed and
cubed
5 lg Ripe tomatoes cubed
1 Red onion minced
One half cup Basil chiffonade
Directions: Sprinkle bread with water and let stand for 2 minutes. Gently
squeeze the bread dry and tear into 1" pieces. Spread pieces out on a towel
and let dry slightly. In a mixing bowl, whisk together the vinegar, garlic,
oil, salt and pepper. Combine the bread, cucumbers, tomatoes, onions and
basil. toss with the vinaigrette.
