Recipe - Italian Bean Salad

2 cup Chicken broth
1 Rib celery
1 cn Lima beans
1 cn White beans
1 tablespoon Olive oil
2 teaspoon Dried basil
1 Onion
1 lg Can whole tomatoes
Salt and black pepper
One half cup Parmesan cheese
Bring broth to simmer over medium heat. Add celery, lima and white beans to
broth. In saute pan heat oil and cook onion 3 minutes until soft. Stir in
basil. Add onion mixture to bean mixture. Stir in tomatoes. Simmer 5
minutes. Season to taste with salt and pepper. In food processor, puree
soup until coarse. Stir in cheese. Serve hot.
Approximately 1012 minutes.
