Recipe - Iron-Skillet Fried Chicken

PREHEAT OVEN TO 375øF
8 INCH BAKING DISH, GREASED
FRUIT
4 cup Sliced peeled peaches or
nectarines
2 teaspoon Cornstarch
1/3 cup Peach or apricot preserves
TOPPING
One half cup Large flake rolled oats
One half cup Allpurpose flour
1/3 cup Packed brown sugar
1/3 cup Sliced blanched almonds
One fourth teaspoon Ground ginger
1/3 cup Butter, melted
Fruit: In a bowl toss peaches with cornstarch; stir in preserves. Spread
in baking dish.
Topping: In a bowl combine rolled oats, flour, brown sugar, almonds and
ginger. Pour butter over; stir in to make coarse crumbs. Sprinkle with
fruit.
Bake for 30 to 35 minutes or until topping is golden and filling is bubbly.
Serve warm or at room temperature with icecream, if desired. Yield: 6
