Ingredients:

2 pound Fresh spinach; cooked,
drained and chopped
2 tablespoon Lemon juice
One half cup Onion; chopped
2 Cloves garlic; minced and
saut‚ed with onion in a
small amount of olive oil
One half cup Grated Parmesan or cheddar
cheese
6 Eggs

Prep: 10 min, Cook: 15 min. Preheat oven to 350øF. Season the spinach with
the lemon juice. Combine with saut‚ed onion and garlic, and transfer to
oiled individual ramekins. Sprinkle cheese over the spinach mixture and,
using the back of a spoon, make a 1 inch deep well in each. Crack and drop
one raw egg into each well and bake until the eggs are set, about 8
