Recipe - Individual Summer Puddings

Ingredients:

7 cup Fresh berries (raspberries,
blackberries, blueberries)
1/3 cup Granulated sugar
1 tablespoon Lemon juice
12 Soft ladyfingers

Reserve 1 cup berries for garnish. In nonaluminum saucepan, combine
remaining berries, sugar and lemon juice; cover and cook over mediumlow
heat, stirring occasionally, for 7 to 10 minutes or until softened and
juicy but not mushy.

Cut each ladyfinger into thirds; place 2 pieces in each of six Three fourths cup
stemmed glasses. Spoon scant One fourth cup fruit mixture over top. Repeat layers
twice, pressing with back of spoon.

Cover and refrigerate for at least 2 hours or up to 1 day. Let stand at
room temperature for 1 hour before serving. Garnish with reserved berries.
