Recipe - Impossible Crustless Spinach Quiche

1 Onion; large\chopped
1 tablespoon Vegetable oil
1 Frozen chopped spinach; *
5 Eggs; beaten
3 cup Muenster cheese; shredded;**
One fourth teaspoon Salt
1/8 teaspoon Pepper
* (10ounce package)\chopped spinach\thawed\pressed dry ** (12ounces)
Muenster cheese
Saute onion in oil in a large skillet until tender. Add spinach, and cook
until excess moisture evaporates; cool.
Combine eggs, cheese, salt and pepper; stir into spinach mixture. Pour
into a greased 9inch pie plate.
Bake at 350^ for 30 minutes or until set.
YIELD: One 9inch Quiche.
