Recipe - Hot Water Corn Meal Muffins

2 cup Corn meal
4 teaspoon Baking powder
2 cup Boiling water
1 cup Sweet milk
1 teaspoon Melted butter or bacon
grease
1 teaspoon Salt
2 Eggs
Sift corn meal & salt together & scald with the boiling water. Add cold
milk to this mixture quickly & stir to keep the meal from lumping. Add eggs
& beat well. Add baking powder when just ready to put in oven. Add butter
last. Pour into wellgreased muffin tins which have been heated in oven
until almost smoking. Bake at 475 until well browned. Makes 16 large
muffins.
