Recipe - Hot Jarlsburg Muffins

1 cup All purpose flour
Three fourths cup Yellow cornmeal
3 tablespoon Sugar
4 teaspoon Baking powder
One half teaspoon Salt
1 cup Milk
One fourth cup Salad oil
2 Eggs beaten
One fourth cup Chopped red bell pepper
1 cup Shredded jarlsburg
One fourth cup Chopped green chilies; well
drained
One half cup Finely chopped salami
Preheat oven to 425 degrees. In medium bowl, mix flour, cornmeal, sugar,
baking powder and salt until well incorporated. In another bowl, mix
together milk, oil and eggs. Add to dry ingredients. Mix in bell pepper,
cheese and chilies. Add salami and stir until moist. Grease twelve 2 1/2
inch muffin pan cups. Spoon batter into muffin pan, about Three fourths full. Bake
until done. Test with toothpick. Remove muffins to rack . Serve warm.
Approximately 20 minutes.
