Recipe - Hot Cross Muffins

2 cup Flour
1 tablespoon Baking Powder
One half teaspoon Salt
1 teaspoon Cinnamon
One fourth teaspoon Nutmeg
One half cup Sugar
1 Egg; Beaten
1/3 cup Butter; Melted
1 cup Milk; 2% Lowfat
Three fourths cup Candied Fruit; Mixed Cut
One half cup Currants; Dried
1 cup Powdered Sugar; Sifted
2 tablespoon Milk; 2% Lowfat
1 tablespoon Butter; Melted
One half teaspoon Vanilla
Preheat your oven to 400 degrees. Sift the first 6 ingredients together.
Stir in your egg, butter and milk just till blended. Fold in the fruits.
Fill paperlined (or spray muffin pan with pam) tins full, and bake
approximately 20 minutes. Beat the powdered sugar, milk butter and vanilla
till smooth. Chill. After the muffins are cooled, pipe a cross with your
icing, over each muffin.
