Recipe - Hot Borscht

1 Onion,; chopped
1 Carrot,; minced
4 cup Beets,; minced
1 qt Vegetable broth
2 cup Green cabbage
1 teaspoon Cider vinegar
1 teaspoon Caraway seeds

In a large soup pan, add onions, carrots, beets and broth. Bring to a boil
and cook until beets are crisptender. Add cabbage, and cook until
softened. Add vinegar and season with salt and pepper. Sprinkle with
caraway seeds. Serve.
