Recipe - Horseradish And Tofu Sandwich

One fourth cup Plain nonfat yogurt
1 One half teaspoon Freshly grated horseradish;
(or 1 tablespoon
Bottled horseradish)
1 small Dash cayenne pepper
8 sl Whole grain bread
1 10.5 ounce p lite silken
extrafirm; thinly cut or sliced up
; tofu
1 lg Tomato; thinly cut or sliced up
1 cup Alfalfa or radish sprouts
In a small bowl mix together yogurt, horseradish, and cayenne; spread on
bread slices. On four slices of bread, layer tofu , tomato slices, and
sprouts. Top with remaining bread slices. Makes 4 sandwiches.
