Recipe - Honey Mustard-Glazed Carrots

1 pound Carrots
1 tablespoon Oil
One half ounce Butter
One half tablespoon Brown sugar
1 tablespoon Honey
One half tablespoon Lemon juice
1 teaspoon Dijon mustard
Freshly ground pepper
2 tablespoon Raisins
Peel carrots and cut into 1in/2.5cm bits. Boil until just tender; drain.
Mix together honey, lemon juice and mustard. Heat oil and butter in heavy
frying pan.
Fry carrot, stirring, for 3 minutes. Add in sugar, black pepper, raisins.
Cook, stirring for 2 mins. Stir in honey mixture. Cook, stirring, until
carrots are glazed around 2 mins.
