Recipe - Honey Balsamic Vinaigrette

One half cup Canned apricots; drained
1/3 cup Balsamic vinegar OR red wine
vinegar
One fourth cup Honey
2 teaspoon Dijon mustard
1 Clove garlic; minced
1 teaspoon Dry Italian seasoning
One fourth teaspoon Salt and pepper
1 tablespoon Olive oil
In blender or food processor, combine apricots, vinegar, honey, mustard,
garlic and seasonings; blend until smooth. With motor running, slowly
drizzle in olive oil until combined. Makes 1 cup.
Prep: 10 minutes
Nutrients Per l/4 Cup Serving: 134 calories, 3.5 g fat (23% calories from
fat), 0 mg cholesterol, 0.35 g protein, 26 g carbohydrates, 0.5 g dietary
fiber, 171 mg sodium.
