1 lg Egg
Three fourths cup Nonfat milk
2 tablespoon Vegetable oil
6 tablespoon Unsweetened applesauce
1/3 cup Honey
1 cup Whole wheat flour
1 cup Allpurpose flour
3 teaspoon Baking powder
1 teaspoon Salt
1 tablespoon Lemon peel; grated
One fourth cup Lemon marmalade
Heat oven to 400 degrees. Spray 24 minimuffin pans with Pam.
Beat egg; stir in milk, oil, applesauce and honey. Mix flour, lemon peel,
baking powder and salt. Stir into milk mixture all at once just until flour
is moistened (batter will be lumpy.) Fill muffin cups about Three fourths full. Spoon
One half teaspoon of marmalade onto batter in each cup.
Bake about 1520 mins. or until golden brown. Immediately remove from pan.
Makes about 24 minimuffins. K=66 Fat=1.5 gms.
