Recipe - Honey-Curried Chicken

3 pound Chicken breasts
1/3 cup Orange juice
1/3 cup Honey
One fourth cup Dijon mustard
4 teaspoon Curry powder
pinch cayenne pepper
Spray a baking dish with nonstick cooking spray. Arrange chicken in a
single layer, skin side down if not skinned. Combine remaining ingredients
in a small bowl, stirring until smooth. Pour over chicken. Cover and
refrigerate if not cooking immediately. Bake chicken, uncovered, in 375
degree oven for 20 minutes, basting once. Turn chicken over, baste again,
and bake 20 minutes longer or until chicken is tender. Makes 46 servings.
