Recipe - Hominy And Chicken Casserole

4 cup Cubed stuffing mix
2 cup Chicken, cooked and minced
1 Golden hominy, 15oz can
1 Green chiles, 4One half ounce can
One half Red bell pepper, chopped
One half cup Parsley, chopped
1 Cream of mushroom soup, can
1 Whole kernel corn, can
1 cup Cream or milk
2 teaspoon Cumin
1 cup Monterey Jack cheese

Combine stuffing and next five ingredients in large bowl. Stir together
remaining ingredients (except cheese)and combine with stuffing mix. Pour
into lightly greased 2quart shallow baking dish. Cover lightly with foil
and bake at 350f for 35 minutes. Uncover, sprinkle with cheese and bake an
additional 5 minutes or until cheese is melted and bubbly
