Recipe - Holiday Yams

One half cup Sugar
One half cup Brown sugar; packed firm
2 tablespoon Cornstarch
One half cup Orange juice
One fourth cup Melted butter
Salt to taste
4 (up to)
5 md Sweet potatoes; peeled
& cut or sliced up
Combine sugars & cornstarch. Blend well. Stir in orange juice, butter &
salt. Simmer over low heat, stirring constantly, until slightly thickened.
Place potatoes in a lightlygreased 2quart casserole dish. Pour orange
sauce over potatoes. Bake at 350 for 30 minutes or until potatoes are
tender. Yields 6 servings.
