Recipe - Holiday Roast Beef Salad

8 ounce Alfalfa sprouts
1 pound Roast beef, thinly cut or sliced up
1 14 oz. can artichoke hearts,
drained and halved
1 small Red pepper, seeded and cut
into strips
One half cup Olive or vegetable oil
One fourth cup Wine vinegar
Salt and pepper
Chopped parsley
Arrange the alfalfa sprouts on a large platter. Roll up the roast beef
slices and arrange on top of the sprouts. Place the artichoke hearts
between the beef rolls and garnish the center with red pepper strips. Mix
the oil, vinegar, and salt and pepper to taste. Spoon over the salad.
Sprinkle with chopped parsley. To make ahead, keep the salad and dressing
separate until serving time. Serves 8 Typed in MMFormat by
