Recipe - Hoe Cakes

One fourth cup Shortening, , Crisco (or
oil)
1 One half cup Cornmeal, , selfrising
One fourth teaspoon Baking soda
1 One fourth cup Buttermilk
1 Egg, , lightly beaten
1 tablespoon Shortening, , Crisco
melted
Heat One fourth cup Crisco shortening or oil to 365 deg. F in heavy skillet, on
mediumhigh heat. Combine cornmeal and baking soda in medium bowl. Add
buttermilk, egg and one tablespoon melted shortening. Stir just until dry
ingredients are moistened.
Pour One fourth cup batter into skillet for each hoe cake. Fry 1 or 2 minutes or
until golden brown on each side. Add additional shortening, if necessary.
Drain on paper towels. Serve immediately.
