Recipe - Highland Oat Squares

2 ounce Vegetable margarine
1 Finely chopped onion
4 ounce Mushrooms; chopped
(optional)
5 ounce Rolled oats
6 ounce Finely grated carrot
5 ounce Vegetarian cheese; grated
1 Free range egg; beaten
1 Clove garlic; crushed
(optional)
1 tablespoon Soya sauce
1 tablespoon Tomato sauce or pur‚e
1 teaspoon Basil
Salt and black pepper to
taste
1. Preheat oven to 170øC/325øF/gas mark 3.
2. Melt the margarine in a pan. Gently cook the onion and mushrooms for 5
minutes. Transfer them to a mixing bowl and add all the other ingredients.
3. Season to taste with salt and pepper and mix well. Press mixture into a
greased, shallow baking tin and bake for 2530 minutes.
4. Cut into 20 small squares and serve.
