Recipe - Heres Hero Salad

Ingredients:

125 g Red cabbage; finely shredded
; (4oz)
125 g White cabbage; finely
shredded
; (4oz)
10 Cm; (4 inches) piece
; cucumber, cubed
100 g Cauliflower; in small
florets
; (31/2oz)
50 g Button mushrooms; quartered
(2oz)
100 g Baby carrots; scraped and
thinly
; cut or sliced up (31/2oz)
6 Cherry tomatoes; quartered
50 g Unsalted peanuts; (2oz)
50 g Chickpeas; cooked or canned
; (2oz)
2 tablespoon Sunflower or olive oil
1 tablespoon Lemon juice
Salt and freshly ground
black pepper
75 g Cheddar cheese; grated (3oz)

Mix together all the prepared vegetables.

Stir in the peanuts and chickpeas.

Mix the oil and lemon juice together, adding the salt and pepper to taste.

Drizzle the dressing over the salad and leave to stand for 30 minutes for
the flavours to develop.

Sprinkle the cheese over the top of the salad before serving.
