Recipe - Herbed Couscous

2 cup Couscous
2 cup Water
1 tablespoon Butter
Salt; to taste
Freshlyground black pepper;
to taste
One half bn Scallions; finely cut or sliced up
One fourth cup Finely minced Spanish onion
1 tablespoon Rice wine vinegar ; (to 2
tbspns)
Bring water, 1 tablespoon salt, and butter to a boil. Add couscous, remove
from heat and stir quickly and thoroughly. Cover for 5 minutes. Moisture
will be absorbed. Fluff with a fork. Add scallions, Spanish onion and rice
wine vinegar. This recipe yields 4
