Recipe - Herb Bean Salad

3 cup Cooked white beans (or can)
1 cup Cucumber,pared,seeded, minced
1 cup Sweet red pepper, minced
2 tablespoon Celery, chopped
2 tablespoon Parsley, chopped
2 tablespoon Green onions, chopped
One fourth pound Whole tender green beans
6 Cherry tomatoes, halved
Lettuce leaves
HERB DRESSING
One fourth cup Lwmon juice
One fourth cup White wine vinegar
1 teaspoon Basil (1 tb. if fresh)
One half teaspoon Thyme (1 One half ts. if fresh)
1 tablespoon Honey
1 tablespoon Dijonstyle mustard
One half teaspoon Grated lemon peel
One half teaspoon Salt
1 Clove garlic, minced
1/8 teaspoon Pepper
One half cup Olive or vegetable oil
Combine white beans, cucumber, pepper, celery, green onions and parsley.
Toss well with One half c. herb dressing. Let stand 1 hr. at rm. temp.
Steam green beans about 2 min. or until crisptender. Pour 2 tb. dressing
over green beans while they are still warm and toss.
Arrange white bean mixture, green beans and tomatoes on lettuece lined
salad plates. Serve with additional dressing.
HERB DRESSING: Combine all ingredients except oil. Gradually beat in oil
until slightly thick. Use in the herb bean salad recipe above. Yield: 1
cup.
