Recipe - Hellen Holders Zuckinni Bread

4 Sweet potatoes; peeled and
cut into Frenchfry strips
(3 pounds)
2 tablespoon Cajun spice seasoning (I
used more)
1 tablespoon Cinnamon
1 teaspoon Hotpepper sauce (I omitted)

Here's an excellent recipe for ovenfried sweet potatoes that I think is
excellent! I got this from a Woman's Day article on Firemen who cook. As a
sidenote, the recipe's named for an area of NYC where there are often
violent fires. Original recipe called for o*l, which I left out.

Heat oven to 400 F. Spray jellyroll pan with nonstick spray, if desired.
Mix potatoes and seasonings in a bowl until well coated. Bake about 40
minutes until tender.
