Recipe - Helen Doyles Irish Soda Bread

3 cup Allpurpose flour
1 cup Raisins
One fourth cup Sugar
1 tablespoon Caraway seeds
2 teaspoon Baking powder
1 teaspoon Salt
One half teaspoon Baking soda
1 One half cup Nonfat buttermilk
Vegetable cooking spray
Combine first 7 ingredients in a large bowl; stir well. Add buttermilk;
stir well until a dough forms.
Turn dough out onto a lightly floured surface, and knead lightly 3 to 4
times. Pat dough into an 8inch round cakepan coated with cooking spray.
Bake at 350 degrees for 45 minutes or until a wooden pick inserted in
center comes out clean and bread is golden. Let cool in pan 5 minutes;
loosen edges of bread with a knife. Remove from pan; let cool on a wire
rack. Yield: 12 servings.

NOTES : My wife and I both work fulltime, so I do most of the cooking, and
my mom's soda bread can always be found at our house. It's great for
