Recipe - Hearty Vegetable Beef Soup

Ingredients:

2 pound Stew beef, cubed
3 One half qt Water
1 Onion, chopped
1 tablespoon Salt
One half teaspoon Thyme
One half cup Split peas
6 Carrots, cut or sliced up
3 cup Celery, minced
1 Green pepper, minced
3 Medium tomatoes, cubed
1 One half cup Corn
2 Onions, cut or sliced up
1 Large potato, cubed
1 cup Spinach, chopped
1 cup Green beans, chopped
1 cup Green peas
1 cup Lima beans
1 cup Ketchup
2 tablespoon Parsley, chopped

In large kettle, cover beef with water and add chopped onion, salt,
thyme. Bring to boil. Skim fat from surface. Add split peas, cover
and simmer over low heat, 34 hours. Add all remaining ingredients.
Cover and simmer 30 minutes. Adjust seasoning.
