Recipe - Hearts Of Palm And Zucchini Salad

Ingredients:

1 cn Hearts of palm (150z); drain
and dice
1 cl Garlic
2 tablespoon Jalapeno vinegar*
One half teaspoon Salt
One half teaspoon Pepper
6 tablespoon Olive oil
1 md Zucchini; minced
1 md Tomato; minced
One half Sweet onion; minced

Combine all the ingredients and refrigerate for at
least 2 hours. Spoon onto a bed of mixed lettuce.
*Note: you can substitute the liquid from a jar of
pickled jalapeno for the Jalapeno vinegar

Nutritional info per serving: 260 cal; 5g pro, 18g
carb, 21g fat(67%), 5.1g fiber, 373mg sodium
