Recipe - Heart-Healthy Cornbread Muffins

1 cup Yellow corn meal
One half cup Allpurpose flour
2 teaspoon Baking powder
1 tablespoon Sugar
One half teaspoon Salt
One half cup Egg substitue, beaten
1 cup Lowfat buttermilk
1 teaspoon Vegetable oil
Mix and sift dry ingredients. Add milk, egg substitue, and oil. Pour into
muffin tins that have been sprayed with nonstick spray. Bake 2030 minutes
at 350 until golden brown on top.
Per Muffin: 131 calories 2 grams fat
