Recipe - Healthy Eggnog

1 pt (16 oz.) egg substitute;
thawed
1 qt Skim milk
1 cup Granulated sugar
1 teaspoon Ground nutmeg
One half teaspoon Ground allspice
1 teaspoon Vanilla extract
1 tablespoon Rum extract (or 1 cup dark
rum or bourbon)
1 Container (12 oz) Cool Whip
Lite
Here's a very healthy (i.e. no fresh eggs and much less fat). It was
developed by a local chef, Michael Moskwa, and is delicious. I've been
making for the holidays for the past 3 or 4 years.
Place egg substitute, milk, sugar, nutmeg and allspice in a large mixing
bowl and whisk until frothy. Add vanilla and rum extracts (or liquor) and
whisk again. Gently fold in wellthawed Cool Whip until fully blended.
Chill well. Makes 12 6oz. servings with 165 calories and 3 grams fat.
(Note: a plain glass of whole milk is equal in calories and has 4 grams
fat).
