Recipe - Healthy Cornbread

Three fourths cup Corn meal
1 cup Whole wheat flour
4 teaspoon Baking powder
Three fourths teaspoon Salt
One fourth cup Honey (or use molasses
It's good too!)
2 tablespoon Applesauce
Three fourths cup Soy milk, milk or water
1 Egg (or One fourth cup egg
Substitute) beaten
One half cup Water *
Sift together corn meal, flour, baking powder and salt. Add remaining
ingredients; mix well with a spoon. Pour into a 9" round teflon baking dish
(or spray a 9" round glass baking dish with "oil & flour" nonstick spray).
Bake at 350 degrees for 25 minutes, or until golden brown.
* Comment from Rob Ryerson: He had to add One half cup water in order to achieve
the consistency of a batter.
