Recipe - Healthy Coleslaw Recipe

2 tablespoon Margarine
3 tablespoon Carrot; shredded
2 tablespoon Celery; minced
2 tablespoon Onion; minced
3 tablespoon Flour
3 One half cup Skim milk; divided
2 cup Baking potatoes; peeled and
minced
One half teaspoon Salt
One fourth teaspoon Pepper
1 pound Cod; cut in 1" pieces Or
Lean white Fish
Oyster crackers
1. Melt margarine in a saucepan over medium heat; add carrot, celery and
onion and saute 2 minutes.
2. Stir in flour; gradually add 2 One half C milk, stirring constantly with a
whisk.
3. Add potato, salt, and pepper and bring to a boil.
4. Reduce heat; and simmer uncovered for 30 minutes stirring occasionally.
5. Add fish and 1 cup milk; cook an additional 10 minutes or until fish is
done.
6. Serve with oyster crackers.
