Recipe - Hawaiian Simmered Pork

4 pound Boneless pork loin or butt
Three fourths cup White vinegar
One half cup Soy sauce
One half cup Brown sugar, firmly packed
One half teaspoon Ground ginger (I like to use
fresh ginger)
Place pork loin or butt in a 5quart kettle. In a bowl, mix together
vinegar, soy sauce, brown sugar and ginger. Pour over pork, cover and
simmer approximately 3 hours or until pork is tender when pierced with a
fork. This is one of my old tried and true recipes. The original recipe
card is so faded that I can hardly read it! I like to serve this with hot
rice.
