Recipe - Hatch Green Chili Salsa

Ingredients:

2 pack Plus 1 t. unflavored gelatin
2/3 cup Cold water; divided
1 One fourth cup Sugar
1 cup Light corn syrup
2 teaspoon Vanilla
Powdered sugar
1 One half cup Black and orange colored
sugar

Sprinkle the gelatin over 1/3 cup cold water. Let stand 10 minutes to
soften.

Bring the sugar and remaining 1/3 cup water to a boil in a small covered
saucepan. Uncover and boil 5 minutes. Pour the mixture into the bowl of an
electric mixer. Add corn syrup and gelatin and stir until dissolved. Beat
at medium speed until stiff peaks form, about 1020 minutes. Add in
vanilla.

Dot the corners of a jelly roll pan with a bit of the marshmallow mixture.
Then line the pan with wax paper. (The dots keep the paper in place!)
Spread the marshmallow mixture evenly into a 3/4" thick rectangle. Sprinkle
lightly with powdered sugar and let stand until firm.

Cut out halloween shaped using metal cookie cutters. Remove the cutouts
form the pan using a metal spatula. Coat the marshmallows with colored
sugar. Makes about 24 2" marshmallows.
