Recipe - Hashis Parmentier (Boulestin)

8 ounce Cold boiled beef
2 Rashers bacon
1 teaspoon Chopped parsley
Slat & pepper
1 One half ounce Butter
3 small Onions
1 small Shallot
Worcestershire sauce
1 pound Mashed potatoes
One fourth pt Stock
Mince the beef and rashers of bacon very finely, add salt, pepper, chopped
parsley. Melt the butter in a saucepan or a frying pan, and fry the
chopped onions and shallots until golden brown. Then stir in the meat and
fry it lightly, add about One fourth pt stock, and a few drops Worcestershire
sauce. Well butter a fireproof dish or pie dish, put in the meat mixture,
well cover with finely mashed potatoes. These should be prepared with a
little butter and milk and carefully seasoned. Brown in the oven.
